Turkish Minted Lamb Chops with Stellar Anodised Bakeware2015-07-19

London is a melting pot of cultures. Not only do you get to know people from all over the world, but you also get to taste a range of cuisines.
This recipe is one of my favourite kind of Turkish kebabs that has mild spices and uses an abundance of Lemon zest and mint with yoghurt to make the lamb chops really soft and melt in the mouth delicious.
You could also use the same recipe to make chicken kebabs or soya chunks,tofu or even paneer for a vegetarian option.
It takes next to no time to make and is extremely popular at parties.
Lamb chops- 600- 800 gms
Cumin seeds, crushed- 1 tsp
Coriander seeds, crushed- 1 tsp
Garlic clove, crushed with a little salt- 1
Mint leaves- 2-3 tbsp
Oregano, dry- 2 tsp
Yogurt- 4 tbsp
Chilli flakes- 1 tsp
Paprika- 1/2 tsp
Olive oil- 2 tbsp
Lemon zest- 1 lemon
Lemon juice- 1
Lime Zest (optional)- 1 lime
Salt- to taste
Pepper powder- 1/2 tsp
Zest the lime and lemon. Juice half a lemon.
In a bowl,mix all the ingredients for the marinade into the yoghurt and give a good mix.
I used my lovely Judge Yoghurt maker to make the yoghurt.
Dip each lamb chop into the mixture, turn over, coating well on all sides and then transfer to a ziplock bag.
Keep this ziplock bag away in the fridge where it can sit from 2- 24 hours.
Then pop it on to your lovely roasting tray and bake at 180C for 25 minutes. Alternatively you could grill it or fry it on the pan or just BBQ it!
