Lio Licious – freeze dried ingredients for your kitchen

I love adding fruit and vegetables to my cooking and I was very excited when Lio Licious asked me to try out their Freeze dried fruit range. I must admit, I was rather intrigued because hitherto, I had always used fresh or frozen produce, never freeze dried. This range of whole and sliced fruit brought endless possibilities to my mind. The products come in a wide range- blackberries, blueberries, strawberries and raspberry all in sliced, whole and powder form.

These come in small pouches that are resealable, which means the products can be kept in the cupboard without going soft and stay very fresh.

However I thought that the cost might outweigh the benefits, but then I realised how much money was saved, because these don’t go off, can be stored easily and are accessible and usable instantly. What more can you want?

I used them in baking muffins, easy peasy- just add in a handful to any standard muffin recipe and the options are endless . You can have any fruit combination that you like.

The most delicious thing that we made though, was a fabulous dessert- Caramel Digestive Frappuccino- so thick you could eat it with a spoon.

Ingredients:

  • 1 cup large ice cubes
  • 2 shots espresso, cooled (or ⅓ cup strongly brewed coffee, cooled)
  • 2 Digestive biscuits
  • ½ cup milk, cold
  • 1 tablespoon caramel sauce
  • 3 tablespoons caramel syrup (45ml)
  • handful of sliced Lio Licious strawberry

Method:Blend together in Vitamix for about 30 seconds. Pulse and blend.

To serve, top with a handful of slice Lio Licious strawberry. It’s so good, I have no words to describe. I dunked a few of the strawberry slices into the drink, so that they re-hydrated and gave the drink a fabulous texture.

As an alternative, you could also reduce the amount of ice cubes and make a thicker mixture that could be eaten as a dessert. This is how the rest of my family eats it.

Of course as an easy option, you could always put a handful over your daily cereal. Simple and delicious.
