Punjab is famous for its robust people and equally robust food. The people of Punjab are a fun loving sort, and adore their cuisine.
Lassi is one such delicious beverage from Punjab. Made entirely from yoghurt, it is served in a huge tall glass and had with breakfast to round off yummy parathas.
I remember drinking a lot of Lassi in Bombay as a child. There was a very famous Lassiwala near my place, and the Lassi was so creamy that one had to eat the top creamy bit with a spoon.
Whenever I make Lassi, a very amusing incident comes to mind.
There was a Lassiwala close to close to my office at Churchgate. Very often people would stroll up to his stall after lunch for a glass of Lassi and often rave about it.
But whenever one of my Punjabi colleagues heard them praise it, he would scoff at them and say that “It is just ‘Bambaiwaali Lassi’. Bambaiwaali Lassi in mini glasses. You guys don’t know what Lassi is. Go to Punjab and then you will never touch this Lassi again.”
Anyways, on to the recipe.
Lassi can be either sweet or Salty, but the one that wins hands-down is the sweet Lassi.
Now you can make the really creamy, luscious version of it, or a healthier, easier on the waist version. I’ll give you the recipe for both.
Ingredients for sweet Lassi
Thick Yogurt – 1 1/2 cup
Sugar – 2 – 3 tbsp
Water – 1/4 cup
Cardamom-(optional) for flavouring
Method for sweet Lassi
Blend all the ingredients and blend till smooth.
Serve in tall glasses. If your yoghurt is not very thick, adjust the amount of water accordingly.
Serve chilled. Sprinkle cardamom powder on top if you like it, lassis don’t necessarily have it.
Ingredients for richer Punjabi Lassi
Thick Yogurt – 1 1/2 cup
Sugar – 2 – 3 tbsp
Milk – 1/4 cup
Cream- 2-3 tbsp
Saffron-(optional) 2 strands, soaked in milk for sometime
Rose essence (optional)- 1/4 tsp
Method for Punjabi Lassi
Blend all the ingredients and blend till smooth.
Serve in tall glasses. If adding rose essence, add it in now.
Serve chilled.
