Stuffed Cheesy Sweet Peppers- a perfect snack, kids favourite!

Its a hard job getting kids, why kids – sometimes, even grownups to eat their vegetables.
But transform them into something special, something cheesy and there might be none left for you.
So is the case with these peppers. Ask my son to eat peppers, and he says disgusting- but say Stuffed Cheese Peppers and he not only eats them, but assists in stufing them as well.
For years now, these peppers have been one of our most favourites appetizers.
Do make them at your parties. I promise they will be eyecatchingly delicious!
Ingredients
- Pointed sweet red peppers- 3
- Boiled potatoes- 1/2 cup
- Sweetcorn- 1/2 cup
- Cheese slices- 2-3
- Salt- to taste
- Oregano- 1 tsp
- Chilli flakes- 1/4 tsp

Method
Step 1
Preheat the oven to 180C
Step 2
Slice the red peppers lengthwise. If you don't have red peppers then you could use any peppers- any colour, any shape. Remove the seeds.
Step 3
Boiled and mash the potatoes.
Step 4
Microwave the sweet corn to cook it. Leave on absorbent kitchen paper to remove excess moisture.
Step 5
Mix the mashed potatoes, sweet corn and salt.Put the stuffing into the cut peppers.
Step 6
Top with the sliced/ grated cheese .
Step 7
Sprinkle the oregano and paprika/ Chilli powder/ chilli flakes
Step 8
Put a greaseproof paper or aluminium foil on a roasting pan.
Step 9
Bake in a preheated oven for 15 minutes, until the cheese melts and the peppers soften.
Step 10
Serve hot!
