A delightful way to serve up a dishload of beta carotene.

Chips don’t have to mean potatoes all the time.. they don’t!


  • Butternut Squash - 1/2 or use pumpkin if easily available
  • Chilli powder- 1/2 tsp
  • Coriander powder - 1/2 tsp
  • Salt - to taste
  • Olive oil - 2 tbsp
  • Pepper powder - 2 tsp


Step 1

Preheat the oven to 220C. Cover a roasting tray with greaseproof paper or aluminium foil.

Step 2

Peel the butternut squash. Those in a healthy mood could just leave the peel on. Cut into wedges.

Step 3

Put all the spices and oil on the wedges and mix well.

Step 4

Put the wedges onto the roasting tray in a single layer. Do not overlap.

Step 5

Bake for 20 minutes or till lovely and golden.

Yummy and¬†healthy.. checks all the boxes…
