Seafood and Prawn Noodles

We love noodles, always have. When I think of my introduction to Chinese cuisine, I’m reminded of the Hakka noodles and Schezwan chicken that we had as children.

There was something amazing about how the man stood in front of a huge smoking wok and tossed in one ingredient after another  and then served your food piping hot straight of the wok. And the smells that emanated from them were intoxicating, captivating!

Even today when I am short of time, but my tastebuds are crying out for more, Chinese food is my favourite go-to.

My son absolutely loves this version of noodles that can be made in a jiffy..

This recipe uses crabsticks or  surimi sticks and prawns.

Ingredients

  • Quick cooking Noodles- 1 bunch per person, or as indicated on packet
  • Onion, finely sliced- 1/2
  • Bell peppers, any colour- 1/2 thinly sliced
  • Fish sticks- 6
  • Prawns, medium sized- 12-15
  • Light Soy sauce- 2 tsp
  • Pepper- 1/4 tsp + 1/4 tsp
  • Salt- to taste
  • Sesame Oil- 1-2 tsp ( optional)

Method

Get the fishsticks cut to size, the onions and peppers sliced.

  

Marinate the prawns with some soy sauce (1 tsp), salt and pepper.

Boil the noodles as per instructions on the pack. I have used very fine noodles which only need boiling for 2 to 3 minutes, but you could use any noodles of your choice.

Heat oil in a wok. Fry the prawns for 2-3 minutes and set aside.

In the same wok, add the onions. Add in the ginger garlic paste. Add the drained and washed noodles.

Add in some soy sauce. I like light soy sauce, it does not make the dish too salty. Adjust the salt and pepper.

Add in the peppers, toss for a minute or two.

Then add in the fried prawns and fishsticks.

If you are not averse to nuts, try adding in a bit of sesame oil at the end to finish of the dish. It not only gives a fantastic flavour, but also adds a fabulous sheen to the noodles.

Tada.. dinner is served in less than 10 minutes.. What did i tell you?
