Eggs spell breakfast for me. I love a hearty breakfast. I can manage with less dinner, but I need to start by day with something filling, and so does my son.
So many mornings, I make this for him- egg protein + mushrooms and cheese- for good cheer.
He loves this recipe so much that he insisted I photograph it and upload it for him, so that he can make it himself when he is a bit older.
Ingredients
- Eggs- 2
- Mushrooms, finely sliced- 1/4 cup
- Cheese, grated- 2 tbsp
- Salt- to taste
- Pepper- to taste
- Olive oil/ butter- 2 tsp
Method
Step 1
Beat the eggs in a bowl.
Step 2
Finely slice the mushrooms and grate the cheese.
Step 3
Heat the oil/ butter in a pan.
Step 4
Add the mushrooms and add salt and sugar. Remember to always cook mushrooms on high heat, so they do not leave too much water.
Step 5
Fry the mushrooms for a while till they mix well with the salt and pepper and get glossy.
Step 6
Add the eggs. They will spread over the pan. To get fluffy scrambled eggs, let them stay for about 30 seconds to 1 minute and then break them up. If you start stirring right away, the scrambled egg doesn't get very fluffy and soft.
Step 7
Sprinkle the grated cheese. Mix and serve straight away.
Serve with a slice of warm buttered toasted bread.
