Savoy Cabbage with Crunchy Bacon

Lovely green Savoy cabbage stirfried with onion and crunchy bacon. Quick, tasty and healthy , this one can be teamed up with roasted meat, baked fish or just soup. Be careful not to overcook the cabbage . This tastes great without the cabbage turning to mush.

An Irish inspired recipe, this is my husband’s creation.

Ingredients

  • Savoy cabbage, thinly sliced- 1/2 about 1 cup
  • Onion, thinly sliced- 1 - about 1/2 cup
  • Bacon - 8 slices
  • Garlic cloves- 3
  • Olive oil- 3 tsp
  • Salt- to tatse
  • Pepper- to taste

Method

Get yourself the freshest green cabbage and the sharpest knife. Slice up the cabbage really really fine.

 

Now slice the garlic cloves and onions. On another board, slice up the bacon. It is best to keep a separate chopping board for the raw meat and fish.

 On a frying pan, heat up some oil . When hot, toss in the bacon and fry till brown. Drain with a slotted sopoon and leave on a plate with kitchen paper to absorb all that oil.

 Now in the same pan, without removing the bits of remaining bacon, toss in the garlic. Fry till garlic turns brown and almost threatening to burn.

 Quickly toss in the onions. Fry till slightly soft. Then add in the cabbage. All this activity is best done on a high flame, so as to keep the vegetables crunchy.

Now add in the crunchy bacon. Toss around for 2-3 minutes till the flavours are absorbed, and you’re good to go.

Excellent on those cold winter evenings, along with some soup, or a piece of toasted bread.
