Roasted Broccoli in Lemon garlic butter – with Pine nuts2013-04-21

Not everyone likes eating Broccoli, but in our house, we are broccoli lovers. We try and find ways and means to cook broccoli, whether in a soup, a pizza topping, a pasta, or then roasted like this one.
I have been making this style of broccoli for many years now. I love the way the roasting caramelises the broccoli and the garlic too sweetens in the process. The lime zest adds a breath of freshness and the toasted pine nuts.. oh, what can I say? I could eat this everyday.
It is a recipe that is healthy, fresh, delicious and screams ‘I want more!!!!’.
Can eating healthy be so good?
- Broccoli florets - 500 gm
- Olive oil- 2 tbsp
- Garlic, finely sliced- 3 cloves
- Butter- 2 tbsp
- Lemon zest- 1/2 teaspoon grated fresh
- Pine nuts, toasted- 2 tablespoons
- Black pepper powdered- 1/2 tsp
- Salt- to taste
- Parmesan cheese(optional)- 2 tbsp
Preheat the oven to 200C
Chop the broccoli into florets. Wash and let dry.
Lightly toast the pine nuts.
Line a roasting tray with some aluminium foil.
Pour the olive oil over the broccoli and sprinkle the salt, pepper and garlic slices. Mix well.
Roast for 15-20 minutes till the broccoli florets are slightly browned. Turn over once halfway through.
After they are roasted, grate the lemon zest , pine nuts and parmesan cheese over the hot broccoli and serve immediately .
