I needed a quick rice to go with the sausage curry, something quick- not the usual boring rice ,but something special that did not take too much time or effort.
So I decided to make this immensely popular version of Yellow Pilaf, so famous in Britain.
Try it, it is so easy.
Ingredients
Rice- 1 cup
Water- 2 cups
Turmeric- 1/4 tsp
Salt(optional)- 1/4 tsp
Oil/ Ghee – 1 tsp.
Method
Wash the rice till the water runs clear. Drain the water. Keep aside.
Heat a pan/ wok.
Heat the oil/ghee. When hot, add in the rice. Fry for 2-3 minutes, till the rice becomes a bit dry. Add the salt and turmeric. Fry till all the rice looks yellow.
Pop the rice into a large microwave proof bowl.
Add in the water.
Cover and cook for 12 minutes.
Keep covered for another 5 minutes. This helps the rice cook perfectly in the steam.
Flake with a fork before serving.
If you like to serve rice shaped like a mound, grease a little bowl with some oil/ butter or ghee.
Fill it with rice in it and tightly pack it in.
When you have to serve, simply invert the bowl onto the plate, tap on the top.. voila!
Serve hot.
Yummilicious !!
Thank you so much for the recipe. I was in a rush and needed a straight forward answer without the entire history of rice. 😊 God bless you.
