This quick coulis provides great accompaniment to any dessert. Tart and flavoursome, it creates a great contrast to creamy cheesecakes or ice-creams.
Ingredients
- Raspberry 250g
- Golden Caster Sugar 1tbsp
- Lemon juice 1-2 tsp according to taste
Method
Step 1
Put the raspberry and sugar in a pan. Put on a low heat, stirring occasionally till the fruit begins to break up. Add the lemon juice.
Step 2
Pour onto a sieve and strain while stirring to push the juices through the sieve. You can put in an electric blender if you want, but fresh raspberrys are soft enough that some gentle pressure with a spoon or spatula is enough to get out all the juices.
