Quick Prawn & Peas Pulao– Prawns Pilaf

Somedays are rushed, so rushed that there is not much time to cook anything elaborate. Quite disappointingly, the freezer is devoid of any ready to eat oven meals or thoughtfully made-ahead stuff. There are only packets of frozen vegetables and maybe a packet of prawns staring back at you.
Do you have such days? Well, I do.
On such days its the quick Pulao (Pilaf) that comes to the rescue.
I love making Prawns Pulao for many reasons-:
a- It gets polished off
b. It takes next to no time to cook
c. It has everything that a proper meal should – carbs, protein, vegetables, spice 🙂 and
d- It gets polished off.. Wait.. did I mention that already?
So on one of such frightfully busy days, when if you closely inspect, not much has been achieved – in tangible terms, but the day has whizzed by, there is no food to eat, this is the recipe I turn to. Surprisingly, no one realises the circumstances in which this was made, for it is so delicious that my family suspects that I’ve been carefully planning and slaving over it.

Ingredients for Tadka
Cinnamon- 2 inch
Green cardamom- 3
Bayleaf- 3-4
Ingredients
- Prawns- 1 cup
- Peas- 1/2 cup
- Onions, finely chopped- 1/2 cup
- Basmati Rice- 1 cup
- Ginger paste- 1 tbsp
- Garlic paste- 1 tbsp
- Turmeric powder- 1/4 tsp
- Chilli powder- 1/2 tsp
- Oil -2 tbsp
- Hot water- 2 1/2 cups
- Garam masala- 1/2 tsp
- Ghee- 1 tsp (optional)
Method
Step 1
Marinate the prawns with the turmeric, chilli powders and salt. Keep aside for about 10 minutes, not too long.
Step 2
Wash, rinse and drain the rice. Keep aside.
Step 3
Chop the onions really fine.
Step 4
Set the Instant pot into Saute mode. It heats up really quick.
Step 5
Add the oil. When hot, add in the whole spices. They will change colour and start swelling up.
Step 6
Now add in the onions. Add some salt. This helps to soften the onions quicker. Remember that the prawns have salt as well, so go easy on the salt. Fry till the onions soften, about 2-3 minutes.
Step 7
Add the ginger garlic pastes and fry for 1-2 minutes. Add in the peas and fry for another 2 minutes.
Step 8
Add the washed and drained rice. Mix gently because the rice grains are very delicate when washed.
Step 9
Add in the prawns. Fry for another minute.
Step 10
Add the garam masala and ghee. I like adding some ghee because it imparts a really wonderful flavour.
Step 11
Add the hot water. This is important to keep the temperature of all the ingredients constant ,else the rice grains will break and the beauty of a biryani or pulao is in the long grains of rice.
Step 12
Switch the Instant pot onto Rice mode, where it will cook away for about 14 minutes.
Step 13
Then it switches itself to Keep warm mode, where you can leave it until you are ready to eat.
Serve hot.
Notes:
For cooking in the conventional mode on the Hob or Microwave
For cooking on the hob or in the microwave, follow steps 1-3.
Then put a large wok on the gas, add the oil and follow steps from 5- 11
If cooking in the microwave, transfer everything to a large microwave proof bowl leaving enough space for the rice to rise, and cook for about 14- 15 minutes.
If cooking on the hob, let the water come to a rolling boil and then put on a tight fitting lid, lower the flame and cook for 12- 14 minutes until all the water has evaporated.
