Pan fried Chicken with Lemon and Herbs

Yesterday, I was so busy with other things that I completely forgot to make dinner. Yeah, some days are like that..
Sometimes, I just toss in dal, rice and vegetables and make a khichdi. But yesterday, my little boss said he wanted to eat some chicken- ideally curry. Well, curry at short notice- sometimes, I just don’t feel upto it.
So instead, I mixed together some ingredients in a bowl with some olive oil, spread it out on the chicken, got my fellow to bash it up and panfried it.
Can you make this more often please, he says. Do I need to say more?
Ingredients
- Chicken breast Chicken breast halves - 3
- Herb mixture- 1 tbsp (I used oregano and tarragon)
- Lemon zest- 2 tsp
- Olive oil- 1 tbsp
- Salt- to taste (Alternative- garlic salt)
- Pepper to taste
Method
Step 1
Mix everything except the chicken- the herbs, oil etc in a small bowl.
Step 2
Make crisscross cuts on the chicken. Now smear the herb mixture over the chicken and put it face down onto a chopping board.
Step 3
Cover completely with cling film and bash with a mallet or rolling pin till about 1cm thick. This helps the flavour of the marinade to permeate right into the chicken.
Step 4
Heat a pan. Add 1 tbsp oil.
Step 5
When hot, add the chicken and fry for 2 minutes on each side.
Serve straightaway with some chips/ frenchfries and salad.
For a spicier variation, try adding 1/2 tsp chilli flakes and 1 tsp each of ginger and garlic.
