If there is one kind of food I am totally in love with , then it has to be salad and loads of it 🙂
Adding lots of different things adds immense flavours, and each bite bursts with a different taste in your mouth.. a bit of spice from the jalapeno, a bit of crunch from the sunflower seeds and then that little bit of sweet from the raisins, its is truly fabulous.
I can never tire of eating it.
Ingredients
Fresh head of lettuce- torn into bits- about 1 cup
Tomatoes, small- 3
Jalapeno chillies( in vinegar)- 4-5 slices
Sunflower seeds- 2 tsp
Raisins- 2 tsp
Ingredients for Dressing
Olive oil- 2 tsp
Balsamic vinegar- 1 tsp
Salt- 1 pinch
Pepper- 1 pinch
Method
Get the freshest lettuce you can find and chop or tear it into bits.
Get all the other ingredients, tomatoes, raisins, jalapenos and sunflower seeds.
Cut the tomatoes and mix all together.
In a bowl, mix together the ingredients for the dressing.
Pour over the salad. Mix well.. Enjoy!
Can be had on the side with some grilled chicken or fish, with a soup or just by itself!
For a change in taste, add some olives or feta cheese. Enjoy!
