Mexican food is all the rage. Everyone everywhere raves about Mexican food.
It is interesting how they use the tortilla (a largish roti, mostly made from cornflour) into different avatars. Sometimes, it is stuffed with beans, salsa, chicken, chillies, sour cream, rice- even- to make a kind of thick roll known as burrito, or then rolled and stuffed with chicken, beans etc and baked with cheese and tomato salsa on top to make the amazing Enchiladas.
Quesadillas are like a fun toasted sandwich- swapping the bread with the tortilla. Not only does this make for excellent party food, but it can creatively disguise your leftover Rajma (other beans) and poshed up.
This recipe is astonishingly quick and super yum. Try it.
Ingredients
- Beans, boiled and cooked- or from the tin- 1 cup ( any beans of your choice)
- Onion, chopped- 1/4 cup
- Tomato-1/2 cup
- Ginger paste-1 tsp + 1 tsp
- Garlic paste- 1 tsp + 1 tsp
- Enchilada spice mix or garam masala- 1 tsp
- Coriander powder- 2 tsp
- Peppers(capsicum), any colour- finely chopped- 1/4 cup
- Sweet corn (optional)- steamed/ microwaved- 1/4 cup
- Tortillas- 3
- Salt to taste
- Coriander, finely chopped- to garnish
- Cumin seeds- 1 tsp
- Oil- for cooking
- Cheese- a handful
- FOR A NON-VEG OPTION
- Chicken breast, diced- 2
Method
Step 1
If making the non-veg option, dice the chicken and marinate with 1 tsp ginger paste, 1 tsp garlic paste and salt to taste. Keep aside for at least 15 minutes. Then stir fry in 1 tsp oil on high heat.
Step 2
Boil/ pressure cook the beans. If using tinned, use as directed. Finely chop the onions, peppers and microwave/ blanch the sweet corn.
Step 3
In a wok, heat oil. Add in the cumin seeds.
Step 4
When it starts spluttering, add in the onions and fry for 2 minutes till soft.
Step 5
Add in the remaining ginger garlic paste (1tsp each) and fry . Add in the tomatoes. Add salt, cover and cook for 5 minutes till soft and mushy.
Step 6
Add in the turmeric, chilli powder, garam masala spice powder, coriander powder. Mix well. Ad the cooked beans. Cover and cook for 5-7 minutes till it absorbs all flavours. Mash coarsely.
Step 7
Add in the rest of the vegetables- sweet corn & peppers(capsicum). Fry well, till mixed.
Step 8
For the Tortillas
Heat a skillet/ tawa and grease with some oil. Warm the tortilla on it for 10 seconds on each side to make it soft.
Put a tortilla on a plate and stack up all the filling, beans, chicken or any stuffing of your choice and a handful of cheese on half of the tortilla. Fold over.
Grease a skillet with some oil, and pop the folded tortilla on top . Brush the top of the tortilla with some oil and turn over the filled tortilla very carefully.
The aim is to get those beautiful brown spots on either side. Alternatively, you could grill it in the oven or pop it on to a healthy grill!
Serve with guacamole and sour cream for a delicious treat!
