Insalata Caprese literally means a Salad from Capri, an island from the Campania region of Italy.
The most important thing to take care of in this salad is to use the freshest ingredients. The best (read most expensive) mozzarella your money can buy , the ripest tomatoes and the best virgin olive oil!
- Mozzarella ball - 3
- Large ripe tomato - 3
- Basil leaves - 10
- Extra virgin Olive Oil - 3 tbsp
- Coarse salt- to taste
- Balsamic Vinegar ( optional)
Buy the best possible Mozzarella . Use one ball per person and slice. And the ripest tomatoes, again , one per person. Slice thinner than the mozzarella . Tear the basil leaves. Arrange the mozzarella and tomato in a circular fashion on a plate. Drizzle the olive oil , salt and pepper on the salad. Scatter the basil leaves on the salad.
Optional: 1. Mix 1 tsp of balsamic vinegar with 2 tsp of olive oil and beat together. Use as dressing. 2. Use baby mozzarella balls instead.
When you are done eating, all that remains in the memory is the softness of the mozzarella , the tanginess of the dressing and the ooh so cool feeling in your belly!
