Incredibly delicious Pasta with Mushrooms- the easiest recipe ever

I bet you are going to be surprised when you read the list of ingredients- garlic and what? Red chilli? You will probably think that now I have completely lost it.
But ye of little faith, trust me, try out this recipe.
I promise this is the only recipe you will ever use- its terribly quick and incredibly delicious.
It is as good as and I daresaybbetter than any mushroom pasta that you are served in restaurants.
Try it.
Ingredients
- Pasta- 2 cups boiled
- Garlic cloves- 2 finely grated
- Cheese- (Cheddar + Parmesan)- finely grated- 1/4 cup
- Mushrooms, finely sliced- 1 cup
- Dry Red chilli -1
- Lemon juice- 1 tsp (optional)
- Olive oil - 2 tsp
- Basil leaves- 2 tbsp- (optional)
- Salt & Pepper- to taste
Method
Boil the pasta according to the instructions on the packet. When done, do not throw away the water. Let the pasta sit in the pan as it is. It is this water that is going to make the sauce later.
Grate the garlic, slice the mushrooms and grate the cheese.
Heat the olive oil in a wok. When hot, add in the red chilli, when it changes colour, add in the garlic and fry for 30 seconds. You can remove the chilli now, as it has already flavoured the oil.
On high heat, add in the mushrooms, add the salt and pepper straight away. Keep cooking on high heat. This is the best way to get the mushrooms as flavourful as possible. Cooking mushrooms on low heat is the best way to ruin them.
If you like the flavour of lemon, add that in now as well. It makes the mushrooms really glossy and imparts a wonderful flavour to the dish.
Cooking mushrooms well is key always to the dish. The chilli, garlic in this recipe flavour them so well, it is unbelievable. The chilli does not leave any trace of its existence either!
Now add in the boiled pasta, mix well. Add the cheese. Mix well.
Add in some spoonfuls of the pasta water, about 1/8 of a cup to make the sauce. THe pasta straightaway gets a lovely cheesy sauce without the addition of even a single drop of milk.
Serve straightaway.. and better be prepared to make it a million times.
