Healthy Wraps- the best way to use up leftovers!

Most afternoons, I feel too lazy to cook. There is always so much work to do.. so little time.
This is when these versatile wraps come to my rescue.
More often than not, there are always some leftovers sitting in my fridge.
I pop those put, chop some veggies, toss in some olives and cheese, make a wrap and then settle down for a satisfying lunch.
The best part about wraps is that you can stuff whatever you like- they’re always delicious.
Eat with some chips and fruit juice for a perfect Deli experience, but if you are in a super healthy mood, just go with the wrap! It’s filling!
Ingredients
- Tortilla wraps- 2
- Onions, sliced- 1/2
- Tomato, sliced- 1/2
- Carrot, grated ( optional)
- Lettuce/ Spinach leaves- 2-3
- Ham, roasted chicken- 1/4 cup ( on-veg option)
- Soft cheese/ feta cheese/ Paneer( Vegetarian option)
- English Mustard- to taste
- Ranch dressing- to taste
- Oil/ ghee- 1 tsp
- Salt & pepper- to taste
Method
On a hot skillet, apply some ghee/ oil and warm the tortilla wrap for 10-12 seconds on each side.
Chop all the vegetables- shred the ham/ chicken, slice the onions & tomatoes, grate the carrots.
Now pop the tortilla on a plate and choose the stuffing you want to go in it. Don’t place everything in the centre, but rather in the 1/4 of the tortilla towards you, leaving enough space at the top and bottom to roll.
Pour some mustard/ ranch dressing or ketchup if you prefer that. Add some salt and pepper.
Now fold the 2 long sides half way over the filling and then tuck in the small side (towards you) over the entire wrap, tucking it in like an envelope.
Looks tricky, but can be easily achieved with practice.
Slice into 2 and serve.
These wrap make for some very comforting afternoon lunches.
