Garlic pull-apart breadrolls- A step by step recipe for the novice baker!

There is something quite magical about baking. Seeing that bread rise up in the oven and the heavenly  aroma that spreads throughout the house- those are the main reasons that make  you want to get that apron on.

Baking is a passion that both me and my husband share. We have been baking now for over a decade- be it bread, or cheese sticks or then dinner rolls, everything excites us.

Last weekend, we were invited to a dear friend’s house for dinner. We decided to take-along these easy, fuss-free garlicky bread rolls for starters.

The soft, luscious bread rolls were a great hit at the party.

We loved them, I hope you do too.

Ingredients

  • Flour (Maida) - 1 1/2 cup
  • Warm water- 1/2 cup + 1 tbsp
  • Yeast - 1/2 tbsp
  • Salt - 1 tsp
  • Sugar - 1 tbsp
  • Olive Oil - 1 tbsp + 1 tsp
  • Sesame Seeds- 1 tbsp
  • Egg- 1 or Milk- 2 tbsp ( for brushing on top of the rolls)

Ingredients for Garlic Butter Spread


Butter, salted- 8 tbsp

Garlic, finely minced/ paste- 2-3 tbsp

Basil leaves, finely chopped – 2 tbsp (Optional Oregano/ Rosemary/ Coriander)

Method

Step 1

Grease a baking pan, loaf tin or a glass pan with olive oil. Leave aside till required.

Step 2

In a large bowl, mix the flour, yeast, warm water, salt and sugar to a smooth, slightly sticky dough. Knead for 4-5 minutes until the dough springs back if pressed. It helps to dip your fingers in oil while kneading, since the dough is sticky. Cover the bowl with cling film and rest in a warm place for about 45 minutes, until the dough doubles in size.

Step 3

Make the garlic spread by simply mixing the butter etc in a small bowl. Keep aside till required. Preheat the oven to 180C / 375F.

Step 4

After the rising time is over, punch the now-doubled dough to knock the air out and divide into two equal portions.

Step 5

Roll out one portion of the dough on a floured surface and roll out gently into a rectangular shape- about /2 an inch thick. Sprinkle a bit of flour if the dough is too sticky- remember, not too generously.

Step 6

Spread about 2-3 tbsp of the garlic spread on the rolled dough. Holding both sides of one end, roll from one end gently and firmly to make a roll.

Step 7

With a knife, cut the roll into half first - and then each half into further halves or thirds - so that you get 4-6 small rolls. Repeat the same procedure for the remaining dough.

Step 8

Now place the rolls in the greased pan. Leave a bit of gap between the rolls, as they will expand further. Let the rolls rise for another 20 minutes. Spread the remaining garlic spread, if any leftover on top of the rolls. That really enhances the taste.

Step 9

Brush some eggwash (beaten egg) or some milk onto the rolls for a brilliant shine and sprinkle the sesame seeds on top for a terrific crunch.

Step 10

Bake for about 30-35 minutes until the top turns golden brown.

Step 11

Serve hot.
