Fried Rice with Cashew Nuts and Chillies

Fried Rice is one of the simplest things to make. The best part is that there is no fixed recipe; add as much or as little as you like, and every time you have a brand new recipe, and a brand new taste.
We had some cousins coming over for Christmas, the menu was Chinese, and so was born this nutty version!
Ingredients
- Rice- 1 cup (cooked)
- Cashew nut, roasted- 3-4 tbsp
- Ginger, grated- 2 tsp
- Garlic, sliced- 2-3 cloves
- Spring onion, chopped- 2 onions.
- Chilli flakes- 1 tsp
- Light Soy Sauce- 1 tbsp
- Pepper powder- 1/2 tsp
- Salt- to taste
- Oil- 2 to 3 tbsp
Method
Step 1
Heat oil in a wok.
Step 2
Add in the cashews, ginger, garlic, chillies and spring onions. Stir fry for 1 minute.
Step 3
Add in the cooked rice and stir fry for 5 minutes. If you want to dd spring onion greens, you could add them now. It is best to use cooled, cooked rice. If you add hot rice, it tends to break. I think the secret to making a good fried rice, is to use rice that has ben sitting overnight in the fridge, basically because it does not have any moisture.
Step 4
Add in the soy sauce, stir-fry for 1 minute. Adjust the salt according to taste.
Step 5
Serve hot.
