Soft, fluffy delicious pancakes and honey… the stuff that dreams are made of! They are really really easy to make, and very quick too. If you are wondering how to create some excitement at breakfast, try these.
Ingredients
- Plain Flour (maida) - 135 gm or 1 cup
- Baking powder - 1 tsp
- Salt - 1/2 tsp
- Caster Sugar - 2 tbsp
- Milk - 130 ml, little over 1/2 a cup
- Egg - 1 large , beaten
- Melted butter -2 Tbsp cooled
- Butter or Olive oil for cooking
- Lemon zest- 2 tsp
Method
Melt the butter in a pan . Keep aside to cool.
In a bowl, sift together the flour, baking powder, salt and caster sugar. In another large bowl, beat the egg lightly.
Add the milk. Mix well. Add the melted butter.
Now slowly, add in the flour and mix well to get a very thick batter. Grate in some lemon zest.
Let the batter stand for 5-7 minutes.
Heat a pan . Grease it with olive oil or butter. I prefer a spoonful of butter.
When its melted, just pour a ladleful of that lovely thick batter. DO NOT try to spread it.
And remember to reduce the heat to medium, so that they cook through and do not burn.
And keep watching. Soon your patience will be rewarded — bubbles of various shapes and sizes will start apperaring on the top of the pancake, like so.
Thats your cue, now flip. Its fun to watch how the pancakes, actually, do fluff up.
Cook this side for a minute or two and then transfer to a plate to serve.
Remember, this batter at best makes 5.
I, invariably, get none, so if you want a share do remember to multiply the quantities accordingly.
Serve with maple syrup, jam, peanut butter, or honey. The choice is endless.
