Ingredients
- Potatoes - 500 grams
- Onions, sliced- 1/2 cup
- Green chillies- 2
- Ginger, grated- 1 tsp
- Turmeric powder- 1/2 tsp
- Salt- to taste
- Lemon juice- 1 tsp
- FOR THE TEMPERING
- Oil- 2 tsp
- Mustard seeds- 1 tsp
- Curry leaves- 7-8
- Asafoetida- 1 pinch
- Urad dal- 3/4 tsp
- Chana dal- 3/4 tsp
Method
- Boil, pressure cook or microwave the potatoes till cooked. Mash coarsely. Keep aside.
- Slice onions, slit/ chop the green chilli and grate ginger.
- Heat oil in a wok and and the oil. When hot, add all the ingredients for the tempering .
- add hing, urad dal and chana dal. Add the curry leaves.
- When the mustard seeds start spluttering, When the dal turns golden brown, add the sliced onions, green chilli and ginger. Saute for a few minutes until onion turns pink. Do not brown the onions.
- Add turmeric powder & mashed potatoes. Add salt as needed.
- Cook for few minutes mixing well. Cover and keep aside.
- When it cools a bit, add lemon juice. Remember not to add lemon juice when it is really hot.
