Dhingri Dulma or Mushroom Paneer Medley

Made with thickly grated paneer and mushrooms, the delicately flavoured shahjeera is the highlight of this dish. It is sure to wow your guests.
Simple and easy to cook, it is a delicious way to get the day’s protein!
This recipe has been adapted from Prashad by Jiggs Kalra, my all time favourite!
Ingredients
- Mushroom sliced- 1 1/2 cup
- Paneer grated thickly- 1 cup
- Coriander chopped- 1/4 cup
- Onion - 1 finely chopped about 1/2 cup
- Tomatoes chopped- 2 medium about 1/4 cup
- Shahjeera (black cumin)- 1 tsp
- Ginger grated - 1 inch
- Garlic- grated- 2 tsp
- Salt- to taste
- Ghee- 3 tbsp
- Red chilli powder- 1/2 tsp
- White pepper powder - 1/4 tsp ( optional )
- Garam masala- 1/2 tsp
- Coriander- for garnish ( optional)
Method
1. Chop mushrooms ,onions, tomatoes and coriander. Grate the paneer and ginger.
Heat ghee in a kadhai or wok. Add the shahjeera and saute for 1-2 minutes till it begins to crackle.
Add onions and fry till light brown. Add the ginger and garlic paste. Fry for 1-2 minutes.
Add the mushrooms, chilli powder, pepper powder and salt. Stir for 3-4 minutes.
Now add the grated paneer and stir fry for 4-5 minutes.
Add tomatoes now, and stir fry for 4-5 minutes. Add garam masala.
Adjust the seasoning. Sprinkle coriander and serve.
Best eaten with rotis, phulkas or parathas.
