Delicious Potato Scones with scrambled Eggs and smoked Salmon Recipe | How to make Potato Scones with Scrambled Eggs & Salmon

These scones are  such a joy to rustle up and serve on a lazy weekend for brunch. They go down a treat.


  • Potatoes - 4-5 large
  • Chives - 4-5 tbsp
  • Flour - 100 gm
  • Butter - 2 tbsp
  • Baking powder - 1/2 tsp
  • Cheese - 3 tbsp grated (optional)
  • Salt - to taste
  • Eggs - 5 large
  • Salt and pepper to taste
  • Garnish
  • Smoked Salmon
  • Parsley


Step 1

Put potatoes in boiling salted water for 7-8 minutes. Drain, cool and peel. If in a healthy mood, you may want to leave the skins on, but thats purely optional. In a large bowl, mash the potatoes.

Step 2

Chop the chives and add to the potatoes.

Step 3

Add the butter, flour , baking powder and salt. If you are in a mood for cheese.. go on, add it! Adjust the salt accordingly.

Step 4

Make small flat balls and shallow fry on a hot pan in olive oil, till golden on both sides.

Step 5

When just about to serve, beat eggs, add the salt and pepper. Scramble the eggs on a hot pan in olive oil. DO NOT overcook.

Step 6

Plate the scones. Balance the scrambled eggs on top of the scones.

Step 7

And on that already shaky mountain top, fold the smoked salmon . If you are not yet satisfied, garnish with a sprig of parsley.

The kids will love you for this…. so much !
