Creamy Chicken and Mushroom Tagliatelle Recipe

Beautiful ribbons of pasta in a delicious sauce, with a taste that lingers in your mouth. Needless to say, at my house, it’s an often repeat!
I have used a packet of different coloured Tagliatelle for this recipe, just to make it attractive.
Ingredients
- Tagliatelle pasta- 4-5 roundels about 2 per person
- Chicken breast- 1/2
- Mushroom chopped- 10
- Onions, chopped- 1 small about 1/4 cup
- Garlic cloves- 1
- Flour 2-3 tbsp
- Milk- 1 cup
- Pepper powder- 1/4 tsp
- Salt to taste
- Olive oil- 2 tsp
- Cheese grated- 1/2 cup ( either Cheddar or Leicester)
- FOR THE SAUCE:
- Milk- 1 cup
- Cinnamon stick- 2 inch
- Star anise- 1 ( optional)
- Garlic clove- whole
- Butter- 1 tbsp
- Olive oil- 1 tsp
Method
Boil the pasta in salted water as directed on the pack.
Chop the onions and mushrooms. Dice the chicken into 1 inch pieces.
While the pasta is boiling away, heat oil in a pan.
Add onions and fry till soft.
Add a clove of grated garlic and toss in the chicken. Fry for 1-2 minutes.
Add the mushroom, stir fry on high flame and add salt and pepper, so that the mushrooms and meat both soak in the flavours of the seasoning and garlic.
For the Sauce
Boil the milk with cinnamon, a clove of garlic and star anise to flavour it.
Meanwhile, in another pan, heat the olive oil and add butter. The oil will prevent the butter from burning. When the butter melts, quickly add in the flour whilst stirring constantly. DO NOT, whatever you do, stop stirring or you WILL get lumps. Stirring constantly ensures a lump-free homogeneous mixture.
Now gradually add the milk very slowly, whilst still stirring constantly. Use a whisk or a wooden spoon, I prefer the spoon. Try to achieve a lump-free glossy mixture.
In the other pan, to the chicken and mushrooms, add the pasta and mix well, tossing properly , so that the pasta gets all the flavours from the chicken and mushroom.
Pour the sauce over the pasta. Mix well. Add the finely grated cheese. Use any cheese you like, cheddar, Leicester, or both.
Toss well and serve with grated parmesan.
