Couscous and Feta Stuffed Peppers- a recipe your guests will love!

I am a great fan of quick food, no wonder that I have fallen so hopelessly in love with couscous.
Versatile in its uses, couscous is amazingly easy to cook. Just cover with boiling water, stand for 10 minutes.. and hey presto! Its ready to serve.
Given our love for salads, and cheese and peppers and all things bright and colourful, this dish makes a oft-appearance in our meals.
So when you want to make something healthy, but is easy on the eyes as well, you know what to cook!
Ingredients
- Bell peppers / Capsicum- 2
- Couscous- 1/2 cup
- Water- 2 cups, boiling
- Feta- 1/4 cup
- Parsley/ coriander- 1/4 cup
- Green chilli- 1- finely chopped
- Lemon juice- 1/2 lemon
- Olive oil- 4 tbsp
- Salt- to taste
- Pepper- 1/2 tsp
- Pinenuts- optional
Method
Step 1
Preheat the oven to 180C
Step 2
Cut the peppers into half, deseed, brush with oil and bake for 15 minutes, until they are still slightly firm. A handy tip here is to thinly slice off a few centimetres off the base of the peppers to help it stand up.
Step 3
Cover the couscous with hot boiling water and set aside for 10 minutes.
Step 4
Fluff up the couscous and pour into a large bowl.
Step 5
Add in the crumbled feta cheese, finely chopped coriander/ parsley, green chilli and all the other ingredients.
Step 6
If using pinenuts, slightly toast on a pan and add into this mixture.
Step 7
Spoon all the stuffing into the peppers, and serve.
