I love gardening.
Not that I’m a very great gardener, but I certainly entertain the idea of an edible garden. So you will invariably find the likes of cucumber, tomato, courgettes, beans and such growing in my garden.
Of these, beans and courgettes are the most prolific. This also means, that I have to really really rack my brains to find new recipes.
My Mum-in-law is over on a holiday and she loves experimenting with food. So guess what? Now she is racking her brain to create recipes for me. Am I lucky or what?
This quick, colourful, fuss-free recipe is her creation.
Whether served up as a quick snack or as a side dish, this recipe will earn you many compliments.

Ingredients
- Courgette/ Zucchini, grated- 1 cup
- Spring Onion, finely chopped- 1/4 cup
- Butternut squash/ Carrot- 1/4 cup
- Whole wheat flour- 2 tbsp
- Grated ginger- 1 tsp
- Sugar- 1/4 tsp
- Red chilli powder
- Salt- to taste
- Oil for frying.
Method
Step 1
Grate all the vegetables. You can use whichever vegetables you have in your fridge.
Step 2
Mix everything in a bowl, even the flour which is used for binding and crispiness.
Step 3
Leave aside for about 20 minutes. The vegetables will leave water and the mixture will become moist.
Step 4
Put about 1 tbsp oil on a flat pan/ griddle. Make balls out of the mixture and flatten them onto the griddle. Fry on each side for 3-4 minutes until crisp.
Step 5
Serve hot.
