Tender delicious cubes of white cottage cheese in spinach sauce.
Bursting with nutrition and flavour, this recipe is a favorite in Indian households.
Ingredients
- Palak ( Spinach ) leaves- fresh or frozen - 1 big bunch or 2 small bunches. If using frozen , use about 4-5 cubes.
- Paneer - 1 packet of 200-250 gms
- Onion- 1 chopped
- Ginger garlic paste- 1 tsp
- Turmeric powder - 1 tsp
- Chilli powder - 1 tsp optional green chillies - 2
- Garam Masala- 1/4 tsp
- Salt - to taste
- Tomato- 1 ( optional)
- Dry red chilli - 1
Method
Step 1
Wash and rinse the spinach. If using frozen , thaw it.. but fresh always works best.
Step 2
Microwave spinach for 3-4 minutes. Those using frozen spinach can go directly to this stage.
Step 3
Chop and dice onion and tomatoes. Cube the paneer.
Step 4
Heat oil in a wok. When really hot, add the chilli. It will change colour instantly.
Step 5
Add onions. Cook till soft. Add ginger garlic paste. Fry for 1 minute.
Step 6
Add the spinach. Add salt. Cover and cook till the spinach wilts.
Step 7
Puree the spinach. Those with a hand blender, go straight on.. but those with a mixer grinder, please let it cool , unless you want the kitchen splashed with green.
Step 8
Now heat the wok once more. Heat 1 tsp oil. Add the paneer and toss around for a couple of minutes. Add the turmeric and chilli powder. This will give the paneer a delightful colour. Keep paneer aside. The health freak could completely omit frying the paneer and go on to the next step.
Step 9
Add the spinach mixture . Adjust the seasoning. Add garam masala and paneer and let boil together for a minute or so. While cooking with greens , it is very important to go easy on the salt because greens have a very high sodium content.
Step 10
Serve with rotis or rice.
The gravy is green , beautiful and most importantly, very smooth. A lovely way to get all those fussy eaters to gobble it down.
