This has been an absolute life saver when specially on days when I have had surprise after-school parties or playdates. Quick to make and delicious to eat. Always, always goes down a treat!
Ingredients
- Sweet corn- fresh, frozen or tinned
- flour- 1 to 11/2 cup
- milk - 1/4 cup
- salt to taste
- pepper - 1/4 tsp
- coriander - 1/4 cup
- soda bicarb- 1/2 tsp
Method
Step 1
Microwave the frozen corn for 2 minutes , till soft. If using fresh corn , grate it off the cob or try to slightly chop it in the food processor. Do not make a paste. add the flour and milk. Add salt , pepper. Add coriander. Mix well . It should be of a very thick consistency, so that you can spoon it onto the pan. Add water as needed to get the required consistency. You should not need more than 1/4 cup.
Step 2
For frying: Heat oil in a shallow pan. Add spoonfuls of the mixture onto the pan. Fry on one side for 2-3 minutes. When the underside turns golden brown, flip it over and cook for another 2 minutes. Serve hot. It is excellent on a cold winters day for a snack, or a delicious after school snack. Try it, your kids will love it.. the big ones and the small 🙂
