Chicken and cheese sandwich recipe | How to make toasted chicken sandwich

As I keep saying, sandwiches are an absolute lifesaver. Monday or SUnday, most days you will find me munching on a salad and having a sandwich on the side.
I just simply love them. Whether made from scratch or simply to convert existing leftovers, sandwiches simply are the best.
Today I had some leftover chicken in my fridge, so I shredded it, added some cheese and lo behold.. a yummy treat.
Ingredients
- Sliced bread- 4
- Butter/ sandwich spread- enough for 4 slices
- Cooked chicken- 1/2 cup
- Onion, sliced, lightly sauteed- 1/4 cup
- Cheese, grated- 2-3 tbsp
- Oil- to spread on the bread slices
- Salt- to taste
- English Mustard, 1/2 tsp- to spread on the slice
- Mayonnaise- 1 tsp- to spread on the slice
Method
Step 1
Shred the chicken and lightly saute the onions.
Step 2
Spread the butter & Mayonnaise (optional) and Mustard paste on the bread and put the chicken,onions and cheese on it. Adjust the salt as required.
Step 3
Put another buttered slice on top & firmly close the sandwich.
Step 4
With a pastry brush, apply some oil on the top and bottom of the sandwich and pop into a hot grill for sometime till nicely browned.
Step 5
This can be eaten straightaway. If packing for lunch, remmebr to pack it in foil, so it stays soft for a long time.
Step 6
Serve with a hot tomato ketchup.
