Besan Ladu—a Diwali special recipe

Ladoos are a favourite with everyone in India and are specially made for festivals.
In my house, while my Mum was around, you didn’t have to wait until Diwali to get them. There was always some or the other yum treat sitting tucked inside the boxes in the cupboards, always something to look forward to.
This is her favourite recipe for Besan Ladoo. Try it. They are so yum, I’m sure you’ll want to make them every so often.
Ingredients
- Besan or gram flour-2 cups
- Ghee- 1/2 cup
- Powdered or Icing sugar- 1 cup
- Cardamom powder- 1/2 tsp ( from 2-3 cardamoms)
- Raisins- 2 tbsp
Method
In a large wok, dry roast the besan on a slow flame for about 10 to 12 minutes till it changes colour slightly and the texture changes. Do remember not to rush this step or turn the gas on too high, although it might seem really tempting. Stir constantly.
Add in the melted ghee.
Mix well and avoid lumps. You will find that the mixture becomes sticky and it is harder to stir, but do not give up. Keep stirring for 5-6 more minutes, until you get a distinctive nutty fragrance of besan and the oil starts leaving the mixture.
It should look something like this. At this stage, you can switch off the gas.
Add in the powdered/ icing sugar and the raisins.
Mix thoroughly.
Now using both hands, take small amounts of the mixture and roll between your palms to make Laddus ( ladoos).
