Baked Mayonnaise Chicken- the surprisingly easy one!

It was Valentine’s Day and me and my son had planned a surprise dinner party for my husband. It had to be something that my 8 year old helped in, so it couldn’t be too complicated or elaborate.
So we settled on chicken, because that’s a favourite and baked because it is low-fuss. To accompany the chicken, we made cheese and corn balls and garlic dough balls as well.
It was fun. The food was delicious. The chicken was absolutely tender, melt-in-the-mouth delicious.
Probably one of the easiest chicken recipes that you could ever make- the least worrying. Marinate and bake- not hard at all, is it? Also, it does not have much spice, so a favourite with kids.
I would highly recommend it if you have to throw a party suddenly or for Friday nights, when you don’t want to cook too much or order takeaways.

Ingredients
- Mayonnaise- 1/4 cup
- Garlic, grated- 1 tsp
- Pepper powder- 1/2 tsp
- Oregano, dried- 1 tsp
- Tarragon or thyme, dried- 1 tsp
- Breadcrumbs, ideally seasoned- 1/3 cup
Method
Step 1
Cut the chicken breast or thigh fillets into thin long slices.
Step 2
Mix the mayonnaise with the grated garlic, pepper powder and dried herbs. For a shortcut, try using just Ranch dressing instead. Don't add anything else in that case.
Step 3
Marinate the chicken in this mixture for at least 30 minutes. I would actually recommend about 2 hours or more for an extremely tender chicken.
Step 4
If using pre-seasoned breadcrumbs, just lay them out on a plate. If you make fresh breadcrumbs like me, then spread them out and add some salt, 1/4 tsp dried herbs- thyme or tarragon and 1/4 tsp of chilli flakes or chilli powder
Step 5
Preheat the oven to 200C for 5 minutes and cover a baking tray with aluminium foil or greaseproof paper. Spray with a nonstick spray or brush with oil to prevent the chicken from sticking.
Step 6
Dredge the chicken with the breadcrumbs, taking care to cover it on all sides.
Step 7
Place on the roasting tray and bake for 20-25 minutes, till completely cooked.
Step 8
Serve hot!
Serve with coleslaw.
Notes:
For a variation, add 1/4 cup cheddar cheese while marinating.
