Christmas is special.
It is about love, laughter, gifts, giving, sharing, friends, family and food.
Everyone worries abut the Christmas Roast.
Why not start the day with a special breakfast too?
This lovely pancake recipe is made extra special with the addition of apples and cinnamon to bring the christmas spirit alive.
The good thing is that it uses only 1 spoon of sugar and is so very easy to make. No standing time, just grate, mix and pour out!
The best part- well , my 10 year old made it. It is that simple. Truly.
And yes, delicious too.

Ingredients
- All purpose flour ( maida)- 1 1 /4 cup
- Baking powder- 1 1/4 tsp
- Cinnamon- 1/4 tsp
- Sugar- 1 tablespoon
- Butter, melted- 1/4 cup
- Egg- 1
- Milk- 1 cup
- Apple, grated finely, 1 cup ( about 2 medium apples)
Method
Step 1
In a large bowl, add the egg. Whisk lightly.
Step 2
Add in all the wet ingredients- milk, butter and apple. Mix well.
Step 3
In another bowl, sift the flour, cinnamon powder, baking powder and sugar. I tend to just whisk it together rathe than sifting. Works for me 🙂
Step 4
Now slowly add the flour mixture into the wet ingredients. Mix gently till combined and ensure that there are no lumps.
Step 5
Heat a large griddle on the pan. I love using my cast iron pan on this. Pancakes come out so much better on Cast Iron pans
Step 6
Lightly oil the surface. When warm enough- you will be able to tell if you put your hand over it- you can feel the heat. DO not put pancakes on a less than hot ( not burning hot) pan- they will not fluff up but will go quite limp!
Step 7
When hot enough, put in a ladleful- about 1/4 cup of batter. Fry for about 2 minutes on each side till browned.
Serve hot. They are just superb.
I served them with a drizzle of honey.
