When you have overindulged and want something nice and light to eat or even when you simply just want some warm comfort food, this recipe will come to your rescue.
Flavoured just by the aroma of nigella seeds, this easy recipe with minimum ingredients, is from my Mum-in-law’s kitchen
So on rush days, no time to cook much days- I cook this one!
Ingredients
- Beans- 250 gm
- Potatoes, 1 medium ( about 1 cup)
- Kalonji (Nigella seeds)
- Coriander powder- 1/4 tsp
- Salt to taste
Step by Step
Method
Step 1
Wash and cut the beans into inch sized pieces. Blanch / microwave for 2 minutes. It cuts down the cooking time.
Step 2
Chop the potatoes into fingers, about the same height as beans. Stand in a bowl containing water- till you need them. This will remove the extra starch and prevent them from oxidising.
Step 3
Heat oil. When hot, add in the nigella seeds. Remember kalonji ( nigella seeds) take a while longer to fry than cumin.. so don't follow the 30 second rule here. They take almost a minute to fry, and release the most wonderful aroma.
Step 4
Throw in the potatoes. I always love throwing potatoes into kalonji, I love the way the kalonji jumps up, coats the potatoes and never lets go. Its most amusing.
Step 5
Add the beans. Mix well.
Step 6
Add salt and the coriander powder. Mix well.
Step 7
Cover with a tight fitting lid
Serve hot with rotis/ parathas or just steaming hot rice!
Hi, I tried your recipe today and it turned out delicious. Thank you very much. What caught my attention were the minimum ingredients used. My mother in law hails from Silchar and makes a similar Alu beans recipe, except that she squeezes a little ginger juice (freshly grated) into the sabzi, before removing it off the flame. This lends a distinct taste and aroma to the dish.
