Quick Microwave Vegetable Pulao Recipe | How to make Microwave Pilaf

This is my best go to option on weeknights. Quick, no need to switch on the gas, one-pot, no fuss, no mess and lots of veggies.

Ingredients
- Rice, preferably Basmati- 1 cup
- Assorted chopped frozen/fresh vegetables- beans, carrots, peans anything
- Salt- 1 tsp
- Ghee- 1 tsp (optional)
- Cumin seeds/ Jeera- 1 tsp
Method
Step 1
Wash rice in several changes of water until the water runs clear.
Step 2
In a large microwave bowl, add the rice and chopped vegetables.
Step 3
Add salt to taste.
Step 4
Add water. Remember the golden rule of water- 2 cups for every cup of rice and 1/4 cup for the vegetables. If using frozen vegetables- don't add extra water, because they already have some. Won't spoil the dish, but will make it sticky.
Step 5
Add 1 tsp of ghee on top of the water. Sounds weird, eh- but it works, trust me.
Step 6
Add the cumin seeds to the water.
Step 7
Microwave for 12-14 minutes, depending on your microwave.
Step 8
Let stand for 2-3 minutes.
Step 9
You will know that the rice is done when it sort of stands up like this.
Fluff up with a fork and serve.
It worked, really. Super easy, very light on stomach, feels good after you have it.
