Ingredients

  • Potatoes - 500 grams
  • Onions, sliced- 1/2 cup
  • Green chillies- 2
  • Ginger, grated- 1 tsp
  • Turmeric powder- 1/2 tsp
  • Salt- to taste
  • Lemon juice- 1 tsp
  • FOR THE TEMPERING
  • Oil- 2 tsp
  • Mustard seeds- 1 tsp
  • Curry leaves- 7-8
  • Asafoetida- 1 pinch
  • Urad dal- 3/4 tsp
  • Chana dal- 3/4 tsp

Method

  1. Boil, pressure cook or microwave the potatoes till cooked. Mash coarsely. Keep aside.
  2. Slice onions, slit/ chop the green chilli and grate ginger.
  3. Heat oil in a wok and and the oil. When hot, add all the ingredients for the tempering .
  4. add hing, urad dal and chana dal. Add the curry leaves.
  5. When the mustard seeds start spluttering, When the dal turns golden brown, add the sliced onions, green chilli and ginger. Saute for a few minutes until onion turns pink. Do not brown the onions.
  6. Add turmeric powder &  mashed potatoes. Add salt as needed.
  7. Cook for few minutes mixing well. Cover and keep aside.
  8. When it cools a bit, add lemon juice. Remember not to add lemon juice when it is really hot.
