Sushi shop – a terrific Masterclass
I’ve been making sushi for sometime now. I learned it from a friend and since my family enjoys cooking together, we make sushi together once in a while.
So I was delighted to be invited to a sushi making masterclass at Sushi Shop in Marylebone.
Time to perfect my sushi-making skills, I thought.
What I least expected was a French Chef. You know how passionate the French are about their food and cooking, so you can imagine a French Chef who is a trained Sushi chef- all the more particular and harder to please.
The Masterclass proved to be a delight and Chef Pierre Boudy was a wonderful teacher and perfect in technique.
We learned how to make
SUNNY ROLL- A fresh and slightly sour maki roll. Contains Sea bream, kumquat, avocado, yuzu miso sauce
SMOKY ROLL . This gourmet roll is full of smoky flavours of Japanese tonkatsu sauce and oak smoked mozzarella, crunchy cucumber and shrimp tempura, topped with Thai chives for a fresh note. 7-spice shichimi.
CREAMY SUSHI (2 pieces): This salmon sushi is covered with a seared masago egg sauce for smooth yet crispy feel. Contains Salmon, Japanese mayonnaise, masago.
This one was the most fun. I enjoyed blowtorching the sauce on this sushi. Makes it that bit more special.
After learning some tips and tricks and most of our class happily stuffing their face with sushi, we left with a box full of our own creations. The response at home, from my son and husband, was stupendous and it was polished off in seconds.
I loved how Sushi Shop have have experimented with flavours and it really shows in the sushi. Honestly, you do not need any addition of soy sauce or Wasabi, that would be an insult to the chef, the sushi is so good, Honestly!

I had a lot to take away from my Sushi Shop masterclass, hopefully I can create at least some of the stuff I learned.
