{"id":6938,"date":"2015-05-01T17:35:53","date_gmt":"2015-05-01T17:35:53","guid":{"rendered":"http:\/\/vaish.sengupta.net\/of-cloves-and-capers\/?p=6938"},"modified":"2015-05-01T17:53:00","modified_gmt":"2015-05-01T17:53:00","slug":"adam-gray-at-the-great-british-chefs-masterclass-at-the-cookery-school-london","status":"publish","type":"post","link":"https:\/\/vaish.sengupta.net\/of-cloves-and-capers\/adam-gray-at-the-great-british-chefs-masterclass-at-the-cookery-school-london\/","title":{"rendered":"Chef Adam Gray  at the Great British Chefs  Masterclass at the Cookery School, London"},"content":{"rendered":"<p>Last week, I was privileged to attend a Masterclass organised by the <a href=\"http:\/\/www.greatbritishchefs.com\/\">Great British Chefs<\/a> at the <a href=\"http:\/\/www.cookeryschool.co.uk\/\">Cookery School<\/a>, tucked away in Little Portland Street.<\/p>\n<p>The Masterclass was conducted by the extremely talented <a href=\"http:\/\/www.adamgraychef.co.uk\/\">Chef Adam Gray<\/a>, the Michelin starred Head Chef at the Skylon Restaurant at London&#8217;s most vibrant Southbank.<\/p>\n<p><img loading=\"lazy\" class=\"alignnone  wp-image-6939\" src=\"http:\/\/vaish.sengupta.net\/of-cloves-and-capers\/wp-content\/uploads\/2015\/05\/20150424-IMG_4847.jpg\" alt=\"20150424-IMG_4847\" width=\"406\" height=\"542\" \/><\/p>\n<p>The Chef is very passionate about British Food and talked extensively about what a difference the quality and freshness of the produce make to the dish.<\/p>\n<p>He also talked at length about the benefits of Rapeseed oil, especially his favourite brand Mellow Yellow. He uses it to roast, fry, cook and even as a dressing.<\/p>\n<p>I was shocked that it also tasted divine as a dip- just with bread. I couldn&#8217;t believe I hadn&#8217;t detected it, until the Chef walked upto me and told me what oil it was. Believe me, I wouldn&#8217;t have tried it, never ever have dipped my bread into Rapeseed oil-\u00a0 if I knew. But I am glad I did.<\/p>\n<p>I had to revise my opinion about Rapeseed oil, my previous experiences with it not being so good. I have always disliked the particularly strong odour that rapeseed oil (or even the Canola oil as it is called in the US) has. But Mellow Yellow made me revise my opinion. Pronto.<\/p>\n<p>He then introduced us to Sea Kale &#8211; something none of us food bloggers had encountered before. so we had an end product in mind.<\/p>\n<h3>Ticklemore goat\u2019s cheese fritters with heritage tomato salad<\/h3>\n<p><img loading=\"lazy\" class=\"alignnone size-medium wp-image-6953\" src=\"http:\/\/vaish.sengupta.net\/of-cloves-and-capers\/wp-content\/uploads\/2015\/05\/20150424-IMG_4895.jpg\" alt=\"20150424-IMG_4895\" width=\"525\" height=\"700\" \/><\/p>\n<p>This is what we were supposed to replicate .. so after gushing over the tomatoes and the beautiful presentation, off we went to roll, chill, dip and roll again.<\/p>\n<p><img loading=\"lazy\" class=\"alignnone  wp-image-6956\" src=\"http:\/\/vaish.sengupta.net\/of-cloves-and-capers\/wp-content\/uploads\/2015\/05\/20150424-IMG_4901.jpg\" alt=\"20150424-IMG_4901\" width=\"199\" height=\"266\" \/>\u00a0 <img loading=\"lazy\" class=\"alignnone  wp-image-6965\" src=\"http:\/\/vaish.sengupta.net\/of-cloves-and-capers\/wp-content\/uploads\/2015\/05\/20150424-IMG_4920-575x431.jpg\" alt=\"20150424-IMG_4920\" width=\"360\" height=\"270\" srcset=\"https:\/\/vaish.sengupta.net\/of-cloves-and-capers\/wp-content\/uploads\/2015\/05\/20150424-IMG_4920-575x431.jpg 575w, https:\/\/vaish.sengupta.net\/of-cloves-and-capers\/wp-content\/uploads\/2015\/05\/20150424-IMG_4920.jpg 900w\" sizes=\"(max-width: 360px) 100vw, 360px\" \/><\/p>\n<p>The Heirloom tomatoes were not only beautiful to look at with their vibrant colours, but tasted really delicious.<\/p>\n<p><img loading=\"lazy\" class=\"alignnone wp-image-6960\" src=\"http:\/\/vaish.sengupta.net\/of-cloves-and-capers\/wp-content\/uploads\/2015\/05\/20150424-IMG_4908-575x431.jpg\" alt=\"20150424-IMG_4908\" width=\"658\" height=\"495\" \/><\/p>\n<p>The goat&#8217;s cheese was mixed with cream, seasoned, rolled into small cylindrical shapes and then chilled in the Ultracool Blast freezer at the Cookery School.<\/p>\n<p><img loading=\"lazy\" class=\"alignnone  wp-image-6959\" src=\"http:\/\/vaish.sengupta.net\/of-cloves-and-capers\/wp-content\/uploads\/2015\/05\/20150424-IMG_4905.jpg\" alt=\"20150424-IMG_4905\" width=\"527\" height=\"700\" \/><\/p>\n<p>I was most intrigued by the amount of Fennel seeds that the Chef had mentioned in the recipe. 50gms seemed like a bit much, but then I discovered his nifty trick of using it not in the cheese stuffing itself, but in the cover with the Panko breadcrumbs. The sweet freshness of the Fennel set off the sharp saltiness of the Goats cheese rather well. I think that was a very clever combination, and I did compliment the Chef. A flourless, gluten free cake\u00a0 made with\u00a0 almond and polenta, and flavoured with\u00a0lemon.\u00a0 We found it much harder to mix as compared to flour, the texture of the polenta being completely different, but the result was beautiful- a soft, moist cake. It was a bit too sweet for my liking, but the texture was impeccable.<\/p>\n<p>All in all, we had a wonderful evening. It was fun to cook with foodbloggersand and be guided by the ever smiling, light-hearted Damon Stokes who kept us in splits, while the helpful and modest <a href=\"http:\/\/www.adamgraychef.co.uk\/\">Adam Gray<\/a> helped us and shared some nifty tricks.<\/p>\n<p>I made some new friends too. It was great to catch up with <a href=\"https:\/\/sliceoffme.wordpress.com\">Manjiri<\/a> and cook up a storm.<\/p>\n<\/div>\n<div class=\"textLayer\">\n<p>I loved the <a href=\"http:\/\/www.cookeryschool.co.uk\/\">Cookery School<\/a> too, tucked away in Little Portland Street with its extremely well equipped kitchen. I was really impressed by their blast freezer. It just cut the cooling time to a few minutes!<\/p>\n<\/div>\n<p>Thank you <a href=\"http:\/\/www.greatbritishchefs.com\/\">Great British Chefs<\/a> for organising this exciting Masterclass and for inviting me.
