Starfruit Chutney- a unique sweet and tangy chutney

We love our chutneys, whether to eat alongside or dosas or in sandwiches, they are ever present.
The Bengali chutney, however, is more like a relish- a sweet and tangy delight, an explosion of flavours. It is meant to cleanse the palate of all the tastes of the non-vegetarian course and prepare it for the dessert onslaught.
This unusual chutney has been created by my ever innovative Mother-in-law after we returned home with bags loaded with shopping from my favourite Chinese shop with my lovely friend, Yen.
Yen, my dear, this chutney is for you!
Ingredients
- Starfruit- 1
- Sugar- 4-5 tbsp
- Salt- 1 pinch
- Cumin seeds- 1/2 tsp
- Oil- 2 tsp
- Dry Red chilli-1 (optional- chilli flakes)
- Grated ginger- 1/2 tsp (optional)
- Water- 1/2 cup
- Lemon juice- 1 tbsp
Method
Step 1
Wash and slice the starfruit.
Step 2
In a wok, heat the oil, add the cumin seeds, add in the red chilli. Add the starfruit,

Add salt and sugar and mix well. If adding the ginger, add it now.
Step 4
Add in the water and let cook on slow heat till the starfruit is cooked.
Step 5
Add lemon juice and switch off the gas. The lemon juice not only livens up the taste, but also gives a beautiful gloss.
