Quick Mushroom Curry Recipe- a low fat option

Once upon a time, getting my son to eat was a nightmare. All he ate was rice with ghee, then just khichdi and then for a longtime he only ate cucumber sandwiches for lunch. It was so so hard to get him to eat regular home food.
But now, it is a different story. Now, we want curry every other day- best if it is chicken curry. But I don’t like eating so much meat all the time- so mushrooms just fit the bill.
They cook quickly, lend themselves beautifully to any curry and have a nice texture and bite. They taste fantastic in a spicy curry and extremely healthy at the same time.
So sometimes, when these chicken curry demands come out of the blue, I dish out Mushroom curry.
I’m lucky that mushroom is a favourite as well- otherwise I would have been in big trouble. Can’t mess with the little Boss you see!
Ingredients
- Mushrooms- 1 cup sliced
- Onions, 1/4 cup
- Ginger paste- 1 tsp
- Garlic- 1 tsp
- Turmeric powder- 1/4 tsp
- Chilli powder- 1/2 tsp
- Garam masala- 1/4 tsp
- Bay leaf- 2
- Cloves- 2
- Cardamom- 2
- Yoghurt, beaten- 1/4 cup
- Salt- to taste
- Oil- 2 tsp
- Lemon juice- 2 tsp
- Hot water- 1/4 cup
Method
Step 1
Slice mushrooms. Boil with some salt for 10 minutes. It is a good idea to add some lemon juice as well to prevent it from discolouring. Later, drain and keep aside.
Step 2
Boil the onions with for 10 minutes. When cool, grind to a paste.
Step 3
Heat oil in a wok.
Step 4
When hot, add the bayleaf, cloves and cardamom.
Step 5
Within a few seconds, they will swell up in size. Add the ginger-garlic pastes. Fry for 30 seconds.
Step 6
Add the onion paste. Fry for 1-2 minutes.
Step 7
Add the turmeric, chilli powder and mix well.
Step 8
Add the mushrooms, garam masala and salt. Fry till everything mixes.
Step 9
Beat the yoghurt till smooth. Lower the flame and add into the mushroom mixture. Never add yoghurt on a high flame as it rends to split.
Step 10
Mix well. Add the hot water. Boil for 2-3 minutes.
Step 11
Tastes excellent with rotis/ parathas or rice.
This quick curry tastes really nice. A spicy chicken-curry like taste with healthy mushrooms!

Avinash, I know I’ve been really slow in posting this. Do try it though. THe tricky thing in boiling mushroom and onions together is that the onions need to be boiled for much longer, so unless you start with the onions, boil for 5-6 minutes, then add in the sliced mushrooms, they will lose their shape. But again, you don’t have to boil the mushrooms- its just they retain their colour and shape if boiled.
