Paneer with Capsicum (Peppers) Recipe | How to make Paneer with Capsicum Curry

On a day when I really crave paneer, but don’t have the time to spend too long on cooking- this recipe just fits the bill.
Terrific with rotis, parathas, as a stuffing for wraps or even rice.
Ingredients
- Paneer- 350 gm
- Yellow/ Red Peppers (Capsicum)- 1/2 cup
- Ginger paste- 1 tsp
- Garlic paste- 1 tsp
- Yoghurt- 1/4
- Onion, sliced- 1/4 cup
- Fresh coriander, finely chopped- 1/4 cup
- Turmeric- 1/4 tsp
- Chilli powder- 1/4 tsp
- Garam masala- 1/2 tsp
- Salt to taste
- Oil- 1-2 tsp for cooking
Method
Step 1
Either microwave the block of paneer for just under 1 minute or boil in milk/ water for 4-5 minutes. This makes the paneer really soft. Chop the paneer into cubes.
Step 2
Finely slice the onions and slice the peppers. Beat the yoghurt till smooth.
Step 3
Heat oil in a wok. Add the onions. fry for 2 minutes. Add the ginger garlic paste . Fry for 30 seconds till raw smell goes off.
Step 4
Add the salt, turmeric, chilli powder and garam masala. Fry for just about 1 minute.
Step 5
Add the paneer. Mix well.
Step 6
Pour the beaten yoghurt on top. Mix
Step 7
Add the yellow /green or red peppers and mix.
Step 8
Add the chopped coriander and serve piping hot.
This recipe is really easy to cook and has the right balance of protein and vegetables as well.
For a variation, you could add sweetcorn with the capsicum.
