Masalewaliyan Chaampan- Lamb chops in a deliciously Low fat sauce

Another  gem from my all-time favourite Prashad, this is a delightfully easy and low-cal recipe for all the dieters out there.

What is amazing about this recipe is that unlike most curries, it does not use any extra fat to cook. Can you believe it? No ghee, no oil , no butter- the lamb simply cooks in its own fat.

Yoghurt is used as the base to cook this recipe.

Ingredients

  • Lamb chops- 1 - 1.2 kg
  • Onions, chopped- 1 cup
  • Tomatoes finely chopped - 1/2 cup
  • Ginger paste- 3 tbsp
  • Garlic paste- 3 tbsp
  • Yoghurt- 1 cup
  • Red chilli powder- 1 tsp
  • Cumin seeds- 2 tsp , ground into a powder ( fresh is best)
  • Garam masala- 1 tsp
  • Salt- to taste
  • FOR GARNISHING
  • Ginger juliennes- 2 tbsp
  • Lemon juice- 1 tbsp

Method

Step 1

Chop the onions and tomatoes. Peel and julienne the ginger. Marinate in lemon juice till chops are ready to serve.

Step 2

Clean and prepare the lamb into 2 rib chops. Whisk the yoghurt.

Step 3

Apart from the cumin, garam masala and the garnish, put everything chops and all, into a wok and cook till the lamb chops are tender.

Step 4

Remove the chops and keep aside.

Step 5

Now keep cooking the masala, whilst taking care not to let it stick to the bottom, till it gets quite thick and almost half the liquid has evaporated.

Step 6

Now add in the cumin and stir. Add back the chops and simmer for 3-4 minutes.

Step 7

Sprinkle the garam masala on top. Mix well. Check the seasoning.

Step 8

Garnish and serve.

Step 9

Best eaten with Tandoori roti or Parathas.
