Grilled corn on the cob- perfect for BBQ

Summer spells BBQ. So we try to have a BBQ or a party at every possible opportunity .
There is something really exciting about food cooked in the open. The smoky burnt flavours of food make everyone really really hungry, even the neighbours!
Last month we had a huge party at our house. The menu was quite straightforward- grilled chicken thighs, chicken wings for the non-vegetarians, grilled paneer and grilled asparagus for the vegetarians and grilled Lemon Pepper corn on the cobs for the kids, especially. The corn was a really big hit. Everyone loved it. The recipe is really straightforward. All it needs is 3 simple ingredients.
It is a must at your next BBQ party. If you don’t have a BBQ grill, simply use your grill/ toaster/ oven.
It is quick and super-yum.

Ingredients
- Corn on the cob
- Butter- 1 tsp
- Lemon pepper

Method
Step 1
If using fresh corn on the cob, boil it for 10 minutes. You could also use frozen corn on the cob. They are conveniently cut into 2 inch pieces. If so, thaw them and they are ready to use. Alternatively, you could wrap fresh corn in aluminium foil and bake for 15 minutes at 180C
Step 2
Cut the corn into 2-2 1/2 inch pieces.
Step 3
Brush with olive oil or melted butter and place on the heated grill or BBQ.
Step 4
Turn over till they get beautiful brown grill marks.
Step 5
Once done, sprinkle some Lemon pepper onto the corn. Serve hot.
