Super Quick Yeast free Bhature

I know what you are thinking, Bhature and quick?

But no, I am not joking.. this recipe is fabulous, a keeper indeed.

No more long hours of waiting for the dough to rise for hours.

Try it, I’m sure you’ll love it.

Ingredients

  • Maida( plain flour)- 1 cup
  • Potatoes(boiled and mashed)-1 cup
  • 2-3 tbsp oil
  • salt to taste
  • Oil- for frying

Method

Boil and mash the potatoes. Add in the maida (flour), salt and oil. Mix well.

I used a food processor to tackle this job, because the amount of flour and potatoes seemed overwhelming. After a few minutes, what I managed to get was a crumbly  kind of dough, very soft , but it did not become a proper ball of dough inside the processor.

All it needed was some elbow grease.  Knead a bit, shape it into a ball, cover and keep aside for at least 10 minutes.

Shape into balls, and roll out into discs. The size of your wok will determine whether you make a puri or a bhatura 🙂 Roll accordingly.

Heat oil in a kadhai. Do not put the bhatura in unless the oil is very very hot. One quick test for this is to drop a tiny piece of dough in the oil and if it rises instantly, the oil is ready!

Put the bhatura in the oil and fry on medium heat.

These bhaturas have a lovely crusty exterior and a nice soft inside. Do remember that as the dough has potatoes, it tends to colour very quickly. Please do not fry on very high heat, as the inside might stay uncooked.

Try them, they are absolutely gorgeous!

As always , best served with chhole.. but the choice is endless, really.
