Is it crackers for cheese or cheese for crackers?

Well, there’s one thing I know for sure- Once you start , you just can’t stop.

Recently my little fellow had a cracker making competition at school and these savoury Multigrain Nigella seed crusted crackers won first place.

They were very easy to make and absolutely lovely and crunchy.

Try them.

Ingredients

  • Wholemeal flour- 230 gm
  • Semolina- 115 gm
  • Sesame seeds- 55 gm
  • Sunflower seeds- 55 gm
  • Pumpkin seeds- roughly chopped
  • Honey- 1 tsp
  • Vegetable oil- 3 1/2 tbsp
  • Nigella seeds ( Kalonji) - for sprinkling on top

Mix the wholemeal flour, semolina, salt and the seeds together in a large bowl. In a separate bowl, whisk together 210 ml water, honey and oil. Pour this mixture into the flour mixture and knead into a medium firm dough.

Knead the dough for 5 minutes. Return to the bowl, cover and set aside for 20 minutes.

Use a ruler to cut the dough to similar sized crackers.20151018-P1140795-2

Method

Step 1

Roughly chop the seeds, especially the sunflower and pumpkin seeds. Do not mix the nigella seeds.

Step 2

Mix the wholemeal flour, semolina, salt and the seeds together in a large bowl.

Step 3

In a separate bowl, whisk together 210 ml water, honey and oil.

Step 4

Pour this mixture into the flour mixture and knead into a medium firm dough.

Step 5

Knead the dough for 5 minutes. Return to the bowl, cover and set aside for 20 minutes.

Step 6

Preheat the oven to 180C.

Step 7

Line 3-4 baking trays with non-stick parchment paper.

Step 8

Oil the work surface and roll out the dough to till it is nearly 3mm thick. Sprinkle the nigella seeds on top. Gently roll with the rolling pin so that they stick into the surface of the rolled dough.

Step 9

Place a ruler on the dough and cut on either side of it to get long columns. Now cut these into similar sized rectangles.

Step 10

Place these onto the prepared trays. Make sure they do not touch each other.

Step 11

Spray the crackers with water.

Step 12

Bake for 15 minutes. Turn the oven off, open the door for 30 seconds and close again. Leave the trays in the residual heat of the oven for 10-15 minutes for extra crispiness.

Step 13

Remove and cool on a wire rack.
