An absolutely fun cake that the kids love baking. What they love most is the complete absence of rules when it comes to putting in the batter. Everytime, a new design, a new cake.

Ingredients

Self-raising flour-225g

Butter- 175g

Caster sugar-175g

Eggs, lightly beaten-3

Vanilla extract-½ tsp

Salt- 1pinch

Milk- 2 tbsp

Cocoa powder- 2 tbsp

Strong black coffee, cooled- 2 tbsp

Method

Step 1

Pre-heat the oven to 180C or 350F

Step 2

Grease and dust or line a small loaf tin or 8in round tin.

Step 3

In a large bowl, whisk the butter and sugar until very pale and fluffy.

Step 4

Add the beaten egg, a little at a time, whisking well every time. Then add in the vanilla extract.

Step 5

Sift the flour and salt into a large bowl, and now, slowly fold it into the butter and egg mixture. Remember to mix lightly.

Step 6

Now, the fun bit. This part is where the kids get most excited. Divide the cake batter into two equal portions (about 350g each).

Step 7

Add the milk to one portion, mix well. Keep aside.

Step 8

Mix the cocoa powder and the coffee well ensuring there are no lumps. Stir this mixture into the other portion of the batter. Mix well.

Step 9

Now the excitement! Mainly because there are no rules about how this bit is done.. Let your imagination run wild. Spoon large blobs of each cake mixture into the prepared tin, alternating the flavours to give a marble effect. clean.

Step 10

Bake for 50-60 minutes till the cake is springy to the touch. To test for doneness, insert a wooden skewer into the centre of the cake. If it comes out clean, the cake is done !

Step 11

Allow the cake to cool in the tin for ten minutes, then turn out onto a wire rack and cool completely before slicing.
