Chorizo and Bean Paella Recipe | How to make Chorizo and Beans Paella

A flavourful and wholesome meal. The chorizo adds a lovely flavour to this dish which is already full of proteins from the beans.

Ingredients

  • Kidney beans - 1 tin or 1/4 cup dry beans soaked overnight
  • Chorizo - 5 inch
  • Rice - 1 cup
  • Onions - 1 large
  • Tomatoes - 2
  • Ginger - 1 inch
  • Garlic - 3 cloves
  • Cinnamon- 1 inch
  • Bay leaves - 3
  • Oil - 3 tbsp
  • Salt - to taste
  • Turmeric - 1/4 tsp
  • Chilli powder - 1 tsp
  • Garam masala- 1/4 tsp ( optional) for those who like it spicy.

Method

Step 1

If using dry beans, soak overnight and pressure cook. Wash and rinse the rice.

Step 2

Skin chorizo and slice in 1/2 - 1 cm thickness. Heat oil in a shallow pan and fry the chorizo.

Step 3

Chop onions and tomatoes.

Step 4

In a large wok, heat oil. When oil is hot, add the bay leaves and cinnamon sticks.

Step 5

Add onions and fry till soft. Add the ginger and garlic pastes. Let fry for a couple of minutes till the raw small goes off. Add turmeric, chilli powder and salt. Fry for a minute.

Step 6

Now add tomatoes. Cover and cook for 5 minutes till the tomatoes go all soft and mushy.

Step 7

When the contents of the wok look like a gravy already, add in the beans. Mix well. Add 1/2 cup water , cover and cook for another 10 minutes, till the beans absorb all the taste.

Step 8

Open the pan, stir the beans around and let gravy thicken. Add the chorizo to the gravy

Step 9

Add the rice to the beans and fry for 2-3 minutes. Add hot water about 21/2 cups. Let mix well. A good idea is to taste the water at this point so that the salt and seasoning can be adjusted.

Step 10

Cover and cook for about 14- 15 minutes. After this time switch off the gas and let stand for 5 minutes.

Step 11

By this time an amazing smell would have already beckoned those Oh So suspicious souls into your kitchen! Enjoy hot!
